The Challah cover covers the Challah - an unsliced loaf of bread, which is always braided. Until sundown, when Shabbat begins, the challah remains covered, either by a napkin or by a special Challah cover. At the beginning of the Kiddush, the father of the family says the blessing over the wine, and everyone drinks from the Kiddush cup. After that, the father blesses over the Challah, and takes of the Challah cover. At the end, the Challah is passed around and each person tears a small piece off and eats it.
